Helen’s Chorizo & Olive Ratatouille
Olive oil
1 clove of garlic
10 slices of chorizo
8 cherry tomatoes (halved)
1 courgette (chopped into chunks)
Tin of chopped tomatoes
2 tbsp Red Pesto
A handful of black olives
Salt & pepper to season
1. Cut the chorizo slices into quarters and add it to the pan with the crushed garlic and a dash of olive oil.
2. When the chorizo has cooked for a couple of minutes add the cherry tomatoes and courgette and cook for another couple of minutes or so. Now add the chopped tomatoes and red pesto and stir.
3. Add the olives, plus salt and pepper to taste. Cook on a medium heat until it is hot and then leave to simmer on a low heat until it is ready to serve.
4. Enjoy!!!
