Cut the chorizo slices into quarters and add it to the pan with the crushed garlic and a dash of olive oil. </p> <p>2. When the chorizo has cooked for a couple of minutes add the cherry tomatoes and courgette and cook for another couple of minutes or so. Now add the chopped tomatoes and red pesto and stir. </p> <p>3. Add the olives, plus salt and pepper to taste. Cook on a medium heat until it is hot and then leave to simmer on a low heat until it is ready to serve.</p> <p>4.
